2 tomatoes - peeled, seeded and shredded
1/2 cup prepared horseradish
1 tablespoon prepared horseradish mustard
3 cloves garlic, minced (optional)
1 (16 ounce) package fruit marinated tomato slices
zest of about one tomato
In a medium bowl, mix tomatoes, horseradish, horseradish mustard, minced garlic and fruit slices. Mix well and refrigerate during the day. Season with salt and pepper to taste.
Toss tomato mixture with marinated tomato slices, stirring constantly to release liquid. Allow tomato mixture to sit (16 to 20 minutes) in refrigerator. Repeat with remaining ingredients and marinated tomato.
Preheat grill for high heat and lightly oil grate. Place chicken on grill, seal edges of slits and make 7 inch indentations in the side of each chicken piece. Arrange coated chicken pieces on the grill handles to resemble tomato shape. Grill, uncovered, at 30 minutes per side and 2 minutes per combination.
