Plum Chicken Recipe

Ingredients

1/2 cup olive oil

1 cup chopped onion

1 small green bell pepper, torn into 1/2 inch pieces

1 small red onion, minced

1 medium head cabbage, shredded

1 medium head celery, diced

1 medium head cabbage, quartered

1 medium carrot, cut into 1/4 inch slices

1 medium onion, chopped

3 tablespoons tomato paste

1 tablespoon dry mustard

2 teaspoons ground nutmeg

3 tablespoons olive oil

4 skinless, boneless chicken breast halves

4 slices cooked Cheddar cheese

Directions

Heat olive oil in a large skillet over medium heat. Saute onion and green pepper for approximately 5 minutes. Remove from skillet, and add cabbage and carrot. Cook for about 5 minutes. Add chicken, celery, carrot, onion, parskle, button pepper, bell pepper, onion, cabbage, and potato; cook for about 5 minutes. Stir in cheese.

Pour olive oil over pork and poultry. Cover, and simmer about 15 minutes, stirring occasionally.

I made this exactly as is except I halved it and used muffin tins. It was great. Served it with chowder. I will make this again
