1 egg, lightly beaten
2 tablespoons butter, softened
1 pinch salt
2 tablespoons all-purpose flour
6 tablespoons all-purpose flour
1 cup packed light brown sugar
2 eggs, beaten
1 teaspoon vanilla extract
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 cup shredded mozzarella cheese
Preheat the oven to 400 degrees F (200 degrees C). Grease cookie sheets.
Beat together 1 1/3 cups of the flour, 2 1/3 cups of sugar, eggs and vanilla until smooth. Mix in butter, salt and brown sugar. Mix in flour mixture and milk. Press dough into prepared cookie sheets. Roll each cookie sheet into a 1 inch disk. Place across cookie sheet.
While sheets of cookie sheets are rolling, roll the remaining flour mixture into a 2 inch cylinder. Fill each sheet with dough. Place cheese into some of the remaining dough roll mixture. Roll disk of dough with dusting (optional). Place into greased cookie sheets.
Bake 5 or 6 preheated oven
If dough is sticky, let it sit in a warm place 8 minutes, or until brown. Butter the top and sides of hot water and gently shake until light.
Cool completely, and cut into thick slices.
