1 (21 ounce) can evaporated milk
3/4 cup orange juice concentrate
3/4 cup hot pink lemonade concentrate
1 cup water
2 1/2 teaspoons vanilla extract
1 cup buttermilk
3/4 cup all-purpose flour
3/4 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
In a small saucepan over medium heat, dissolve evaporated milk in orange juice concentrate. Remove from heat and stir in lemonade concentrate, lemonade concentrate, water, vanilla cream, flour, baking powder, baking soda and salt. Drizzle mixture over muffin cups.
Bake at 375 degrees F (190 degrees C) for 45 minutes in the preheated oven, or until golden brown. Cool slightly, and allow to cool completely. Garnish each muffin with a small green bead garnish, if desired.
