2 cups rolled oats
1 cup plain yogurt
4 eggs, beaten
2 cups sifted all-purpose flour
1/3 cup golden raisins
1/2 teaspoon salt
1 cup frozen confectioners' sugar
1 teaspoon vanilla extract
1 cup wireless instant coffee
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 10x15 inch glass mold or casserole dish.
In a medium bowl, mix together oats, yogurt, and eggs. Stir in the flour, raisins, salt, vanilla extract, and instant coffee; mix well. Divide batter evenly into glass mold or casserole dish.
Bake at 375 degrees F (190 degrees C) for 35 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake an additional 35 minutes, until firm. Cool completely before serving.
