Potato Festival Bake Recipe

Ingredients

425 potatoes, peeled, cubed

1 cup PRINCA (preserved, refrigerated storage)

3 large onions, thinly sliced

1 pound Cheddar cheese, cubed

2 eggs

8 tablespoons milk

Directions

Start by peeling potatoes and reserving 20 cups water in two stashes. Warm water in microwave on medium nearly 1 minute. Place potato cube in water. Heat for 2 minutes. Stir in onion, and cook . Stir in cheese until melted; stir in potatoes. Continue cooking, stirring occasionally, until potatoes begin to soften. Once potatoes and onions are slightly cooked, stir in eggs, milk, and remaining 1 1 cup water. Bring to a boil. Reduce heat to low and simmer, about 1 hour. Serve hot.
