The Spinach Squares Recipe

Ingredients

1/3 cup melted butter

1/2 cup butter, softened

1/2 cup packed light brown sugar

3 eggs

1 tablespoon vanilla extract

1 teaspoon lemon zest

1 teaspoon vanilla extract

1 2/3 cups chopped spinach

1/2 cup chopped celery

2 cups shredded mozzarella cheese

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch square baking pans.

In a large bowl, cream together the butter and brown sugar until smooth. Beat in the eggs one at a time, then stir in the brown sugar. Beat in the lemon juice, 1 cup at a time, mixing well after each addition. Combine the spinach, celery and shredded cheese; stir into the creamed mixture.

Pour the cream mixture into the prepared pans. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
