Chipotle Corn Casserole Recipe

Ingredients

1/2 cup butter, softened

1 1/2 cups all-purpose flour

2 tablespoons sifted all-purpose flour

1 teaspoon salt

1 teaspoon ground black pepper

1 teaspoon dried oregano

1/4 teaspoon dried parsley

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan.

In a medium bowl, cream together butter and flour over low speed until smooth. Beat in sifted flour, salt, pepper, oregano, parsley and salt. Stir in the corn and vegetables.

Place mixture onto the prepared pan. Bake in the preheated oven for approximately 40 minutes or until a toothpick inserted into the center of the cake comes out clean. Remove from oven and allow to cool completely.

This was pretty good, but the shrimp and spinach definitely need some seasoning. I added salt, pepper, and a little cumin to balance things out. My tortillas were a little old and dry, so I just encoded it as a single layer of thickened custard. I'll be making this again--a hearty, satisfying, versatile side dish!
