6 eggs
2 teaspoons apple pie spice
1 cup cool whip cream
1 teaspoon vanilla extract
1 1/2 cups sifted all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 cup butter, diced
2 teaspoons white sugar
1 cup chopped pecans
1/2 cup vanilla extract
1 egg
1 tablespoon egg white
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 teaspoon lemon zest
Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch pie pan.
In a large bowl, beat the egg yolks until foamy. Beat in the beaten egg whites. Combine the flour, baking powder, baking soda, cinnamon, sugar, Pecans and vanilla; stir into the egg yolks with the crusts. Mix in the margarine. Fold in lemon zest and apple pie spice. Pour into pie pan.
Bake in preheated oven for 45 minutes to 1 hour, or until toothpick inserted in center comes out clean. Cool on a wire rack.
