Baked Corn Casserole Recipe

Ingredients

1/2 cup butter

2 eggs

1 (16 ounce) package corn bread

1/4 cup water

2 tablespoons brown sugar

3/4 teaspoon salt

1/3 cup shredded Cheddar cheese

1 1/2 cups crushed potatoes

1 cup sliced carrots

1 (10 ounce) package frozen chopped spinach

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch baking dish.

In a medium saucepan, allow butter to go warm. Stir together the eggs, 1/4 cup flour, and salt. Mix well, then stir in corn bread and 1/4 cup water. Cook over medium heat for about 20 minutes, stirring continually.

Stir the brown sugar, 1/3 cup Cheddar cheese, potatoes, and carrots into the casserole mixture. Mix together and chill until cold.

Place the corn bread over a large serving platter and remove the foil. Roll the buttered foil over the bread and spread the mixture over the bottom and sides of the dish. Sprinkle the cauliflower and celery mixture over the bread.

Bake uncovered for 40 minutes in the preheated oven, or until heated through. Serve over cold cooked rice.
