2 1/2 cups strong brewed coffee
1 1/2 teaspoons baking powder
1 cup margarine, melted
1/2 cup brown sugar
1 cup buttermilk
1/2 cup lemon juice
1 teaspoon vanilla extract
1/2 teaspoon lemon zest
1/4 teaspoon salt
1 cup butter
2 teaspoons lemon zest
1 cup white sugar
In a medium saucepan, mix together coffee, baking powder, and margarine. Bring to a high heat, reduce heat, and simmer for 1 minute. Mix brown sugar and buttermilk into hot coffee mixture.
Stir lemon juice, lemon zest, salt, and butter into hot coffee mixture. Bring mixture to a full boil, reduce heat, and simmer for 5 minutes to 1 minute longer. Stir in lemon zest and white sugar. Continue mixing and stirring until mixture is thickened. Place cookie in prepared pan. Chill at least 4 hours before cutting into squares.
