Sweet Potato Pumpkin Pie Recipe

Ingredients

2 1/2 cups all-purpose flour

1/2 cup white sugar

1 cup milk

1/4 cup buttermilk

1/8 teaspoon salt

1 cup butter

1 egg, lightly beaten

1 cup chopped fresh apples

1/2 cup chopped dates

1/4 cup all-purpose flour

1/4 teaspoon ground cinnamon

1 teaspoon vanilla extract

1 cup sweet potato

2 tablespoons butter, melted

2 tablespoons lemon juice

1 teaspoon vanilla extract

1/4 teaspoon salt

1/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

Directions

Combine the flour, sugar, milk, buttermilk, salt, butter, egg, apples, dates and flour. Mix together with hands until just moist.

Pour batter into prepared pie crust. Bake in preheated oven for 60 to 65 minutes. Turn pie and cook an additional 15 minutes, until toothpick inserted in center comes out clean. Cool, and refrigerate.

For the topping: In a large mixing bowl, beat sugar, milk and buttermilk until smooth. Add egg, flour and cinnamon. Mix until light and fluffy. Beat in chopped apple, dates, flour, salt, cinnamon, vanilla and sweet potato. Fill cavity of pie with pie filling. Chill until serving. Garnish and serve.
