Coconut Crumble Pie Recipe

Ingredients

1 (9 inch) prepared graham cracker crust

1/2 cup butter

1/2 cup white sugar

1 teaspoon vanilla extract

1 egg

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon salt

2 tablespoons confectioners' sugar for dusting

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch pie pan.

In a large bowl, cream together the butter, sugar, vanilla and egg until smooth. Stir in the flour, baking powder, baking soda and salt. Mix in the confectioners' sugar to form a well. Fold in the egg and flour mixture. Pour mixture into the prepared pie crust.

Bake in the preheated oven for 20 to 25 minutes, or until center of the pie springs back when lightly tapped. Allow to cool completely before cutting into squares.
