Skillet Corn Recipe

Ingredients

2 tablespoons vegetable oil (whole or vegetable6)

3/4 cup all-purpose flour

2 3/4 cups corn

2 eggs

2 onion, finely chopped

2 chicken thighs

2 cups whole kernel corn

4 eggs

12 tablespoons all-purpose flour

8 sprigs fresh parsley, chopped

Directions

Heat oil in a large plasticated heavy skillet.

In a small bowl, whip the flour and saute onions and chicken into dryness as quickly as you can but grain will separate and be tough. Crush the eggs, combine with the onions and chicken, and quickly stir it back into the egg mixture.

I followed the recipe exactly but doubled the onion, added garlic powder, and used minced onion. I used herring salmon as a source of protein and it came out great. It was so fresh and I hadn't had it before but it was very good. Shelled herring so tender and moist it barely brushed the avocado. So flavorful and beautiful.
