1 large baking sheet
3 large tomatoes, grated
1/2 cup white sugar
1 small onion, diced
2 tablespoons margarine
1 1/2 cups raisins
1 tablespoon raisins
1 tablespoon lemon juice
2 teaspoons vanilla extract
1/2 teaspoon lemon zest
Drizzle tomato juice around the edge of the sheet.
In a large bowl, cut 2 large tomatoes into small bite-size slices. Add the sugar, onion and lemon juice; stir well. Pour over tomatoes.
Cover and refrigerate overnight. Sprinkle tarragon over chilled sheet sheets. Cover tightly with aluminum foil. Heat oven to 350 degrees F.
Bake 2 to 3 hours in the preheated oven, until firm. Flip sheets of foil and place over tomatoes in oven, making sure to transfer sheet to other side of tomatoes. Serve hot.
