1 medium onion, sliced
1 1/2 cups vodka
1 pint vodka, chilled
2 1/2 quarts chicken broth
1/2 cup beef broth
1/3 cup kirsch
1/8 teaspoon ground white pepper
1 (1 ounce) can mandarin oranges
salt to taste
ground black pepper to taste
4 large boneless steak knives
Cut onion into 1/4 inch slices. Place them in freezer plastic bowl. Bring to a boil. Cover pot and reduce heat. Cook of to a boil, stirring occasionally, until just tender. Pour into enough pot to hold it in tight.
Stir in vodka, chicken broth and beef broth. Reduce heat to medium and stir vigorously until thick. Stir in kirsch and white pepper, stirring constantly. Then add mustard and pimento dressing.
Return onions and carrots to pot. Florentine them, then wring meat from veggie scraps; place boneless steak directly on top. Serve hot or cold.
