1 (18.25 ounce) package Kaiser roll muffin mix
1 cup JELL-O brand flavor gelatin
1 cup boiling water
1 teaspoon all-purpose flour
1 teaspoon baking soda
1 3/4 cups milk
2 eggs, beaten
2 eggs, beaten
2 tablespoons vanilla extract
Preheat oven to 325 degrees F (165 degrees C). Grease 9 muffin cups or line with paper liners. In a small mixing bowl, mix gelatin and boiling water. Blend flour and baking soda. Mix into gelatin mixture, mixing until smooth. Fold in milk, eggs and vanilla until very well blended.
Fill muffin liners half way with egg mixture. Pour batter into prepared liners and spread on top.
Bake in preheated oven for 20 minutes, or until just under which time you expect to hear muffin pop. Cool on pan. Repeat on other side of pan.
