1/4 cup olive oil
1 cup lemon juice
1 1/2 cups brown sugar
1 1/2 cups white sugar
1 teaspoon salt
1 cup all-purpose flour
3 eggs
3 tablespoons butter
3 cups sliced fresh mushrooms
In a large bowl, mix 1/4 cup olive oil, lemon juice, brown sugar, white sugar, salt, flour, eggs, butter and mushrooms. Beat until well blended. Spread mixture into a 9x13 inch pan. Chill overnight.
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round baking pans.
Bake in the preheated oven for 30 minutes, or until a wooden toothpick inserted in the center of the cake comes out clean. Allow to cool completely.
