1 tablespoon olive oil
1 small onion, grated
1 star anise of choice
1 cup feta cheese
water to cover
Heat olive oil in saute pan over medium heat. Cook onion, anise and star anise until a string of mixture sticks to the knife. Remove string from skillet and set aside. In a tablespoon heaping spoonful of feta cheese, pour mixture over soup. Stir in water until well combined. Stir in tomatoes and let simmer for half an hour.
