3 skinless, boneless chicken breast halves - cubed
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (10.75 ounce) can condensed cream of chicken soup
2 eggs, beaten
1 teaspoon lemon juice
1 cup lemon-lime flavored carbonated beverage
1 orange, sliced into rounds
1/2 cup whipped cream or instant coffee cream
1/2 teaspoon vanilla extract
salt to taste
Preheat oven to 350 degrees F (175 degrees C). Place chicken in a medium saucepan. Cover and refrigerate overnight.
While chicken is chilling, place spinach in microwave for 5 minutes. Stir in chicken and spinach and pour over chicken. Sprinkle with lemon juice and lemon-lime flavored carbonated beverage. Mix gently. Cover and refrigerate chicken for 30 minutes.
Meanwhile, beat eggs, lemon juice and lemon-lime flavored carbonated beverage together, then pour over chicken.
Pour chicken mixture into a 9x13 inch pan. Pour chicken mixture over spinach. Sprinkle with crushed pineapple and mix thoroughly.
Bake uncovered at 350 degrees F (175 degrees C) for approximately 30 minutes. Cool completely. Serve at room temperature.
To Make The Pancake: In a large bowl, mix cream of chicken soup, eggs, lemon juice and lemon-lime soda. Mix thoroughly, then stir in 1 cup whipped cream or instant coffee. Beat until thickened.
