1 (9 inch) jelly roll pie crust
1/2 cup milk
1 1/2 teaspoons vanilla extract
2 tablespoons orange juice
1 (8 ounce) can crushed pineapple, drained
2 (3 ounce) packages instant vanilla pudding mix
1/4 cup lemon juice
1 teaspoon lemon zest
1/2 cup white sugar
3 tablespoons butter
3 tablespoons light corn syrup
1 teaspoon lemon zest
1 (8 ounce) package cream cheese, softened
1 (8 ounce) can sliced peaches, drained
Preheat oven to 350 degrees F (175 degrees C).
Place pie crust in the pan. Combine milk, vanilla extract, orange juice, pineapple, pudding mix, lemon juice, lemon zest and sugar. Pour mixture into pie crust.
Bake in preheated oven for 1 hour, or until filling is bubbly and crust is golden. Cool completely. Roll into the shape of your choosing. Remove from oven, and press peach slices into crust. Place into pie shell. Place orange slices on top and heat to desired temperature. Cool completely. Serve with whipped cream or whipped cream cheese.
