3 cups butter, softened
3 cups white sugar
1 egg
1 pinch salt
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup white sugar
4 cups quick cooking oats
5 egg whites
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
Cream together the butter, sugar, egg and salt until light. Beat in the flour, baking soda, salt, oats, and egg whites, mix until combined and knead 10 minutes. Drop the dough by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Cool cookies on baking sheet for 5 to 10 minutes before removing to cool completely on wire racks.
