3 eggs
1/4 cup vegetable oil
1/4 cup packed brown sugar
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 1/2 teaspoons lemon extract
Preheat oven to 350 degrees F (175 degrees C).
Grease and flour a 10 inch skillet or muffin pan.
In a large bowl, mix eggs, oil, brown sugar, butter, brown sugar, oil and vanilla. Stir until well blended. Add 1/2 cup lemon extract and mix thoroughly. Pour batter into prepared pan.
Bake in preheated oven for 30 to 40 minutes, or until a toothpick inserted into the middle of the muffin comes out clean. Cool before removing from pan.
