1 large potato, peeled and cubed
2 tablespoons butter
2 ounces smoked sausage, sliced
1 onion, chopped
1 tablespoon Worcestershire sauce
1 1/2 cups milk
1/4 cup water
1 cup tomato paste
1 cup sliced mushrooms
1 cup shredded mozzarella cheese
1 teaspoon seasoning salt
1 teaspoon dried marjoram
In a medium saucepan, melt butter over high heat; stir in the sausage, onion, Worcestershire sauce, milk, water and tomato paste. Bring to a boil, stirring constantly. Increase heat to medium-low or medium-high heat and stir in mushrooms, mozzarella cheese, seasoning salt, marjoram and salt (if using). Reduce heat to medium or low. Cover and simmer 20 minutes, or until cheese is melted and liquid is absorbed. Cover and simmer 10 to 15 minutes more.
