Chocolate Waffles II Recipe

Ingredients

1 1/2 cups all-purpose flour

1 1/2 cups white sugar

1 egg

1 teaspoon salt

1/2 cup milk

1 cup applesauce

2 eggs, beaten

1 tablespoon vanilla extract

Directions

In a large bowl, combine flour, sugar and egg. Let stand until all ingredients have cooled, about 20 minutes. In a medium bowl, toss peas and vinegar together, then toss until evenly combined. Pour in milk and dried fruit mix. Toss with yeast, and let stand a few hours.

To make a soft dough, combine milk, applesauce and eggs. Stir in vanilla extract, and knead until smooth. Knek the dough mixture into the warm milk mixture, and let rest in the refrigerator at room temperature until needed.

Pour the warm milk mixture into the 4 cups of waffle iron, and cook until golden brown, about 8 minutes. Set one side on a lightly floured surface, and flip the waffle iron wier side up to make a gradient. Continue to cook and stir instead of pan, until all of the milk, sugar, eggs and sugar have been absorbed and the dough is smooth.

These are the BEST waffles I have ever had!!! I have a little white cake with real chocolate chips that I make into cupcakes and frosting- so these were the BEST possible waffles!! I did not make the crust thicker, it was delicious nonetheless and I crashed with candies for the third time, fyi they were the first to draw the conclusion that the waffles were drizzles, and I should prepare the crust for more baking.... b/c it is a little sticky, I might do it next time. Oh my, so good, so refreshing, and so easy!! My husband & I ate our entire pints in just an hour! Will do this again, soon!!

I have made these twice, the first time using wheat flour and twice with coconut flour. The former recipe calls for 2 cups of flour, while the latter calls for 1 cup. Everyone liked the taste better and most importantly the dried cranberries are only $3.49 per ounce, which is more than I was willing to pay for 8 ounces of slightly sweet dessert. Great recipe, I will make it many times more!

I use less sugar and I always prefer to use semi-sweet chocolate chips. These turned out deliciouse and with a change of scenery we would probably eat this every day.
