2 cups bright orange juice
1 (12 ounce) jar sparkling wine
1 (12 ounce) can frozen orange juice concentrate
1 (6 ounce) can crushed pineapple, crushed
3/4 cup canned orange rind, chopped
2/3 cup finely chopped lettuce
In a heavy-duty saucepan over medium-high heat, combine the orange juice, champagne, grape juice, pineapple with juice and salt and add the frozen orange juice concentrate. Bring to a boil. Reduce heat and simmer, adding the trimmings the liquid can be left over. Continue to simmer for 5 minutes. Add the pineapple and liquid and cook for 2 minute. Finally pour in the meat, allowing it to melt. Serve immediately.
