Minnesota Pat's Down Condensed Milk Recipe (adapted from The Recipe Book, 1998)

Ingredients

1 1/3 cups milk

3 tablespoons all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

2 eggs

1 teaspoon vanilla extract

1 cup honey

1 egg, beaten

3 tablespoons vegetable oil

1/4 cup clarified butter

1 cup margarine

Directions

In a blender, combine milk, flour, baking powder, baking soda, salt, eggs and vanilla extract. Blend until smooth, scraping bowl occasionally. Mix in honey, egg, oil and margarine. Pour mixture into baking dish.

Bake in preheated 350 degrees F (175 degrees C) for 1 hour at 375 degrees F (190 degrees C) for 10 minutes.

Remove metal sheet from baking dish. Melt butter and add to oven-chilled dish, stirring occasionally. Remove from oven and pour over cake. Bake for another 2 minutes and remove from heat.

This is delicious, and I no longer have to whip egg whites. Since making this was so easy, I'm going to try it with sour cream instead of white....

I've prepared this with basic turkey, Easter egg, and bacon ingredients, and baked at 400 for 15 minutes, until my meat was very tender and a knife inserted into the meat came out perfectly. I could taste the coffee, almonds, and hazelnuts well. I ended up finely mincing the vegetables just prior to serving. It was very moist and full of flavor. My husband usually gets nervous about giving macabre suggestions, but this one was easy to follow. By the way, tasty on turkey! Don't delay - it will be an excellent holiday meal!
