4 large fresh mushrooms, halved
1/2 cup olive oil
1 medium onion, sliced
1 (8 ounce) package cream cheese, softened
3 tablespoons white sugar
1 (8 ounce) package cream cheese, softened
1/2 cup shredded sharp Cheddar cheese
In a large skillet over medium heat, saute mushrooms in olive oil until tender. Stir in the onion and saute until translucent.
In a small saucepan, heat oil over medium heat and add onion. Stir in cream cheese.
Warm the cream cheese until light and fluffy. Heat softened butter or margarine in a small saucepan over medium heat.
Pour cream cheese into mushroom/bean mixture. Mix the Cheddar cheese so that it is completely coated. Pour mixture into mushroom/bean mixture. Repeat with remaining ingredients.
