2 vanilla wafers
3/4 cup butter
6 cups all-purpose flour
3/4 cup granulated sugar
1 teaspoon baking soda
1 pinch salt
1 (14 ounce) can pitted peaches, drained
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, flour, sugar, baking soda and salt until smooth. Beat in the peaches and the remaining flour. Stack the peaches on top of the remaining creamed mixture; pour into the greased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, stirring during last 2 minutes of baking. Cool cookies completely before transferring to a wire rack to cool completely.
