1/2 cup margarine
2 eggs
1 cup white sugar
1 teaspoon vanilla extract
1 teaspoon flour
2 teaspoons baking powder
3 tablespoons margarine
1 cup shredded coconut
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Cut shortening into 1 ounce chunks and set aside.
In a large bowl, cream together margarine, eggs and sugar until light and fluffy. Mix in flour, baking powder and margarine; mix thoroughly. Beat in coconut, pecans and vanilla. Stir together well. Grease cookie sheets or line with parchment, and set aside.
Roll out cookie sheets to about 1/4 inch thick. Poke holes in cookies with a fork. Arrange cookie holes vertically onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, continuing to bake until firm. Remove from baking sheet to a wire rack to cool completely.
