1 wide leaf spinach, chopped
2 medium onions, sliced and discolored
8 green onions, chopped
2 eggs
1 (8 ounce) can diced tomatoes with juice
1 cup papas (domos?)
In a large skillet over medium heat, saute the sliced onion and green onions for about 4 minutes on each side. Remove from heat and stir puree in the eggs, tomatoes, and papas.
