1 (3 ounce) package baby spinach
1 large onion, chopped
1 medium head cabbage, shredded
2 tablespoons olive oil
1 pound medium tomatoes, diced
1 (10 ounce) can tomato paste
1 small strand Italian cheese
2 tablespoons nutmeg
2 tablespoons red wine vinegar
Rub spinach on the bottom of a large pot and toss to coat. Return to a large saucepan over medium heat.
Place cabbage in pot with medium heat. Saute until wilted. Remove from heat and stir in onion, toasted, tomato, tomato paste, Italian cheese, nutmeg, vinegar and chicken. Whisk vigorously until it begins to bubble. Remove from heat. Pour over spinach mixture and simmer for about 4 to 1 hour or until pliable. Serve.
