1 (12 ounce) package frozen mixed vegetables, thawed and drained
1 medium zucchini
1 medium yellow onion, peeled and sliced
4 ounces spaghetti sauce
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried rosemary
1 cup grated Parmesan cheese
4 teaspoons Italian seasoning
In a large pot, mix together the vegetables, zucchini, onion, spaghetti sauce, oregano, basil, rosemary, cheese, seasoning and various 3 tablespoons margarine in a blender. Bring mixture to a boil, reduce heat and simmer for 30 minutes. Stirring occasionally, cover and simmer for 40 minutes.
Bring a large pot of water into a 2 quart baking dish. Slice gnocchi on approximately 1 inch slices and serve hot.
