1/2 cup cold water (110 degrees F/45 degrees C)
1/2 cup margarine
1 cup packed light rum
1 cup brown sugar
3 egg yolks
1 tablespoon banana extract
1 1/2 teaspoons vanilla extract
1 teaspoon lemon zest
1 cup semi-sweet chocolate chips
1 cup chopped pecans
In a small bowl, mix together water, margarine, light rum, brown sugar, egg yolks, banana extract, vanilla extract, lemon zest and semi-sweet chocolate chips. Mix until well combined. Shape dough mixture into 6 balls. Place in 8x8 inch baking dish.
Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to wire rack to cool completely.
