4 pounds apples - peeled, cored, and cut into 2 inch cubes
1 cup golden raisins
1 tablespoon olive oil
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 stalk celery, crushed
2 carrots, grated
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl combine apples, raisins, oil, baking soda, cinnamon, nutmeg, and celery. Mix well, pour mixture evenly into apples. Then coat 2 ramekins with vegetable oil and bake in preheated oven for 30 minutes.
Meanwhile, in serving bowls, cook carrots with water until tender but firm. Season with nutmeg, then sprinkle with cinnamon and nutmeg.
