Pumpkin Cookies II Recipe

Ingredients

1 cup butter, softened

1 cup white sugar

2 eggs

1 teaspoon vanilla extract

4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon salt

1/2 cup sliced almonds

8 cups miniature marshmallows

Directions

Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.

In a medium bowl, cream together the butter and sugar. Beat in the eggs and 2 teaspoons vanilla. Combine the flour, baking soda and baking powder, stir into the creamed mixture until well blended. Gradually blend in the salt, almonds and marshmallows stirring constantly. Drop by rounded spoonfuls onto the prepared cookie sheets.

Bake for 8 to10 minutes in the preheated oven, until golden brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
