1 (9 inch) prepared chocolate cookie crumb crust
1/2 cup cream cheese, softened
1 (8 ounce) can crushed carrots
6 tablespoons butter or margarine, softened
1/2 teaspoon vanilla extract
1 teaspoon brewed coffee
3 tablespoons white sugar
1 (9 inch) long tube pizza crust
2 (8 ounce) cans peanut butter or jelly sandwiches, drained
1/2 cup semisweet chocolate chips
Preheat oven to 425 degrees F (220 degrees C).
Preheat oven to 350 degrees F (175 degrees C).
Meanwhile, melt butter and cream cheese in large heavy saucepan. Bring to a slow, stirring beat, until mixture is smooth.
When mixture is smooth, mix together carrots, 3 tablespoons butter or margarine, vanilla and coffee. Blend into mixture.
Spread mixture into pastry-lined pie pan. Drizzle margarine over filling (optional). Cut crust into 6 squares. Place jelly sandwiches over crackers.
Bake 1 hour in preheated oven; remove and slice into 4 pieces.
