1/2 cup butter, softened
1 cup white sugar
3 eggs, beaten
1 cup all-purpose flour
2 tablespoons lemon juice
1/4 cup brandy
1 teaspoon vanilla extract
salt and pepper to taste
1 pound skinless, boneless chicken breast halves
Preheat oven to 350 degrees F (175 degrees C).
Place butter in a medium bowl, mix sugar, eggs and flour. Stir into the butter mixture just until moistened. Rub the bottom of a 9x13-inch casserole dish with lemon juice, then pour lemon mixture over chicken. Sprinkle the brandy over chicken in pan.
Place chicken breasts in the casserole dish. Sprinkle with lemon mixture and spread with lemon sauce.
Bake at 350 degrees F (175 degrees C) for 1 hour.
