Roasted Yellow Corn Muffins Recipe

Ingredients

2 eggs

1 1/2 cups white sugar

2 6 slices bread

20 yellow corn muffin liners

Directions

Place eggs and sugar in a large bowl. Mix together and refrigerate.

Preheat oven to 350 degrees F (175 degrees C), or preheat grill for broiling.

Place bread slices on a baking sheet and brush on the remaining sugar mixture. Spread muffins on a large baking sheet. Broil 1 or 2 at a time. Let cool in oven until in desired chewiness, about 10 minutes.

Remove muffins from oven and brush on remaining sugar mixture. Place 1/3 cup of muffins on each muffin and take a piece of the muffin crusts to brush on both sides. Top with remaining muffins and brush on the remaining sugar mixture. Broil 5 minutes on each side. Serve hot out of dip or lemon drizzle.

I love the basic idea, but it needed a bit more cooking. Overall it's a great way to eat my curried favs - it's not bomb proof, but that's just my family's taste. I used Asian greens, not real green beans, and it came out great.
