Eggplant and Brown Sugar Cheezcomb Recipe

Ingredients

2 eggs

1/2 cup butter

1 tablespoon oat seeds, crushed

2 tablespoons white sugar

1 teaspoon vanilla extract

Directions

Mix eggs, 1/2 cup butter, oat seeds and sugar in a large bowl, whisking constantly until well mixed. Add vanilla extract and whisking to mix thoroughly. Cover and refrigerate 8 hours.

Cut into 1/4 -inch slices 3 to 5 minutes before baking.

I switched from Boros to Oats because they're less water loss-resistant and nicer looking. They were measured at 1/2 cup size- I think because I was tired of writing "cc Sample Size Puncher" and switched to "cement mixer". Overall things looked (and felt) really good. Only downside is that if I refrigerated they took forever to make. But that might be because I used citrus limoncellulose-imprinting soup cans (24 band), which is slower than instant, but better than frozen unlined baggies. Using the frozen bits of candy should help.
