1 tablespoon olive oil
1 cup medium large tomatoes
6 cloves garlic, chopped
2 teaspoons salt
1 tablespoon paprika
2 tablespoons dried rosemary
1 tablespoon whole dried thyme
1 teaspoon salt
1/2 teaspoon ground black pepper
Heat oil in a large pot over medium heat. Sautee garlic until tender.
Reduce heat and sautee tomatoes for 3 minutes. Mix in 1 1/2 pound sausage, 2 cloves garlic, 2 teaspoons salt, 2 teaspoons paprika, 2 teaspoons rosemary, 1 teaspoon thyme and 1 teaspoon ground black pepper. Cook one and drain on paper towels.
I used a garlic/herb feta - these were SO delicious! Disappeared fast - had to double the filling!
