1 cup softened margarine
1/2 cup white sugar
1 (12 fluid ounce) can or bottle yogurt
1 tablespoon grated lemon zest
1 tablespoon lemon juice
1 tablespoon lemon zest
2 teaspoons vanilla extract
1 cup shredded mozzarella cheese
In a mixing bowl, blend the margarine, sugar, yogurt, lemon juice, lemon zest, lemon juice, lemon zest, and vanilla until smooth. Pour into a serving bowl, toss to coat.
Form the margarine mixture into 1/2 inch thick slices, and roll the slices into rectangle or rectangular rolls. Place rolls on a plate.
Drizzle with melted cheese. Cover with foil. Refrigerate for at least 1 hour before serving.
