2 tablespoons olive oil
6 skinless, boneless chicken breast halves
1 red bell pepper and/or diced red bell pepper seeds - to taste
2 onion, chopped
1 cup dry white wine
3 green onions, chopped
1 teaspoon dried basil
1 teaspoon ground dry mustard
1 clove garlic, peeled and chopped
1/2 teaspoon mixed dried cumin
2 teaspoons crushed red pepper
1/2 teaspoon ground black pepper
salt and pepper to taste
Preheat oven to 375 degrees F (190 degrees C).
Heat olive oil in a large, heavy skillet over medium heat. Saute chopped chicken until cooked through, 4 to 5 minutes total. Remove from heat and let set in cold water until cool.
Saute diced red bell pepper and mix with onion and wine; reduce heat to medium-low and allow to simmer for 2 minutes, stirring often. Measure out wine, pale/warm milk, salt and pepper. Stir chicken mixture into simmering wine/milk mixture.
Spoon 1 1/2 teaspoons of the chicken mixture into each breast, spoon 1/2 teaspoon milk over each chicken breast, sprinkle cumin, marinate peppers, pepper with salt and pepper over each one.
Slice each chicken breast and arrange into 4 shallow bowls; spoon about 1/3 of sauce mixture over each bowl until all the liquid is absorbed and chicken is browned. Layer with couscous, serve with extra couscous.
