1 cup white sugar
1 cup baking powder
2 eggs
1 1/3 cups buttermilk
1 teaspoon vanilla extract
1/2 teaspoon salt
1/3 cup buttermilk
1/4 cup fine corn meal
1/2 cup rolled oats
1/2 cup chopped walnuts
Preheat oven to 350 degrees F (175 degrees C).
Lift 1/2 cup of the buttermilk from the bottom of a 3 quart baking dish. In a large bowl, stir together sugar, baking powder, eggs, buttermilk and vanilla. Stir in salt and 1/3 cup corn meal. Drop cookie sheet mixture onto the bottom of the baking dish.
Bake for 8 to 10 minutes in the preheated oven. Cool completely before removing from pan.
