3 skinless, boneless chicken breast halves
1 onion, diced
1/3 cup soy sauce
1/3 cup cornstarch
salt and pepper to taste
1 medium yellow onion, minced
1/2 cup black beans and rice
salt and pepper to taste
1 pound thinly sliced potatoes
Preheat the broiler.
Cook chicken pieces in preheated grill pan for 15 minutes, turning chicken at middle of cooking. Add onion, soy sauce mixture and cornstarch; cook, stirring occasionally, for 5 to 7 minutes or until chicken is no longer pink. Drain excess liquid, and set aside.
Place chicken pieces in grease and heat about 4 tablespoons (1/4 cup) of cooking liquid. Add potatoes, cover pan, and microwave 5 to 6 minutes. Transfer chicken pieces to the prepared pan with chicken juices.
Top patties with potatoes and serve with gravy egg batter and crushed bite size pretzel crackers!
