1 (18.25 ounce) package vanilla pudding mix
1/2 cup flaked coconut
1 (3 ounce) package lemon flavored Jell-O mix
1 (3 ounce) package instant lemon pudding mix
3 tablespoons lemon pie filling
3 tablespoons lemon juice
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a medium bowl, stir together the vanilla pudding mix, coconut, and lemon-lime flavored gelatin. Pour over pudding mixture and mix well.
In a large plastic cup or bowl, whip cream in mixer until stiff peaks form. Stir in lemon juice. Stir in pudding mixture and mix until mixture is stiff.
Pour mixture into prepared pan. Bake in preheated oven for 75 minutes. Cool completely, remove from oven, and cut into squares.
