1/2 cup butter
1/4 cup packed brown sugar
1/4 cup white sugar
1 egg
1/8 teaspoon ground nutmeg
1/8 teaspoon vanilla extract
2 1/4 cups packed brown rice
1 cup rolled oats
1 cup maple syrup
Preheat the oven to 375 degrees F (190 degrees C). Lightly grease cookie sheets.
In a medium bowl, cream together the butter, brown sugar, white sugar, egg and nutmeg until smooth. Mix in the vanilla. Beat in the rice and oats. Stir into the creamed mixture. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 11 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Cool completely before cutting into bars.
I first found out who these people were from a post on their official website, and what a surprise! These cookies are yummy, I don't even put the baking cocoa in them, and I don't recommend chocolate chips, they were disgusting. I didn't even include the chocolate chips, they are literally just a tiny bit too food-y. I'm pulling my hair out right now, seriously. This is the first time I've had oatmeal such a glaze and I'm glad I did, because otherwise there simply are NOT enough treats in the world!
I made these for a Christmas baking trip, and my husband and kids loved them! I did freeze dried cranberries, too, so that should do it. I cooked the recipe for 30 minutes, instead of 15, when it should have been an easy four minutes. Still, another easy four minutes, for those keeping track. Happy to have new baked goods! Thanks!
