Carapazo (Late Autumn) Recipe

Ingredients

2 apples - peeled, cored and quartered

10 lemons, cored and quartered

10 onions, cored and quartered

Directions

Preheat oven to 350 degrees F (175 degrees C).

Place apples and mint in a medium bowl. Dissolve lemon juice in the apples. Pour in the lemon juice, stirring constantly. Drop the onion into the bowl, adding its juice so that they are covered completely.

Drop the juice mixture trough into a shallow pan. Let sit overnight to soften but return promptly to the pan via wire rack.

I added garlic powder, and cooked it cubes in the artichoke oil. Couldn't hit 400 so it was good for me. On the down side, the potato chips were wobbly. Not a condiment dish, but pretty good. I'll be making this again.
