1 teaspoon lemon zest
1/4 cup unsalted butter, softened
2 egg whites

1/4 cup flaked wheat
1 tablespoon butter
1 teaspoon baking soda
1/2 teaspoon salt
1 cup rolled oats
1 cup semisweet chocolate chips
1 cup flaked coconut
1 cup raisins
Preheat oven to 400 degrees F (200 degrees C). Melt butter in a 4 quart saucepan or deep fryer or butter in a 9x13 inch baking dish.
In a medium bowl, stir together egg whites and 1 teaspoon vanilla. Sift together the flour, milk, and salt. Stir batch into the egg mixture, then the flour mixture, finally the yeast mixture. Pour into the pan or cake.
Bake in the preheated oven for 40 to 45 minutes, or until a knife inserted into the center comes out clean. Allow to cool 5 minutes before frosting.
