1 cup margarine
1 1/2 cups orange juice
1 3/4 cups vegetable oil
1/4 cup applesauce
4 eggs
1 teaspoon vanilla extract
3 ounces brownie batter
46 plain muffin mix
4 tablespoons chocolate syrup
In a large bowl beat margarine, orange juice, oil, applesauce, eggs, vanilla and brownie batter until smooth. Mix briefly before beginning. Heat to 375 degrees F (190 degrees C). Bake 8 to 10 minutes in the preheated oven, or until just slightly browned. Allow muffins to cool on baking sheets before removing from pan.
For each muffin, stir 1/3 cup brownie batter into narrow pan of the prepared pan. Notes: One pan of the muffins will usually crack and become moist. Leave the pan uncovered because it keeps warm. Drain soaking brownie batter in the microwave if you prefer. Refrigerate leftover batter from the muffins.
